中华鳖健康养殖关键点质量安全评价

摘要 本文运用HACCP分析原理,对中华鳖养殖过程进行全面分析,在养殖全过程中建立5个质量安全评价关键点,结合渔业水质、苗种、饲料、水产药物、管理等方面的国家标准(GB)、行业标准(SB)以及地方标准,分别对各质量安全关键点的质量安全状况进行评价,综合各关键点的质量安全状况来评价中华鳖养殖质量安全状况,初步尝试建立了一套经济有效的水产品质量安全评价方法。 This paper carried out analysis on the whole process of Chinese soft-shell turtle farming by the principle of HACCP analysis. The five quality safety assessment critical points had been set up in the process of farming,in combination with GB,SB and local standard of fishery water quality,seed,feed,fishery drug and management,etc,the evaluation of quality safety at different critical control points had been carried out,respectively. Based on assessment of quality safety of Chinese soft-shell turtle at different critical control points a set of quality safety assessment method of fishery products has been established initially.
