酸奶中嗜酸乳杆菌计数检测方法的研究 被引量:5

摘要 嗜酸乳杆菌在肠道中的生理功能已受到人们的高度关注,在生产过程中越来越多的具有特殊益生功能的乳酸菌被添加到乳品中,因此乳品中检测嗜酸乳杆菌含量显得尤为重要。在采用4菌种联合发酵的过程中,各菌在酸奶体系中的生长情况比较复杂。寻找如何准确、快捷的检测方法是我们研究的课题,通过实验,认为在MRS培养基中添加一定量的克林霉素和环丙沙星,使嗜酸乳杆菌能够生长,保加利亚乳杆菌、双岐杆菌和嗜热链球菌都不能生长,使检测更准确而有效,为今后生产、研究提供理论依据。 Lactobacillus acidophilus in the intestine of physiological functions have been people's great concern.More and more special features of the health benefits of lactic acid bacteria in the production process are added to dairy products,which makes it extremely important to test the Lactobacillus acidophilus in dairy products.Four strains used in the fermentation process which the bacteria in yogurt system in the growth of complex.How to find accurate and efficient detection method is the subject of our study.Our experiments show that in the MRS medium added a certain amount of clindamycin and ciprofloxacin can grow Lactobacillus acidophilus,while Lactobacillus bulgaricus,Bifidobacteria and Streptococcus thermophilus cannot grow,which makes our test more precise and effective.Research provides a theoretical basis for future production.
