摘要 目的:研究pH,热,时间,光,金属离子,氧化剂等物质对菊花色素在可见光的稳定性的影响。方法:采用75%乙醇作为提取溶剂,对色素提取液在400-520nm范围内进行测其吸光度。结果:该色素最大吸收波长为400nm,在该波长的吸光度为0.580;该色素稳定的最佳pH条件为4~6;该色素对时间和热比较稳定,但对光不稳定;氧化剂及除铁和铜离子外,其他金属粒子对色素的影响不大;该色素对盐比较敏感;适合为酸性及弱酸性食品利用。 Objective. Study the influence of pH, heat, time, light, metal ions, oxidants and other substances on the visible light stability of yellow pigment in Chrysanthemum. Methods. use the 75% ethanol as extraction solvent, the absorbance of extraction pigment were measured in the range of 400 520nm. Results: The maximum absorption wavelength of the pigment was 400nm, the wavelength at the absorbance was 0. 580; optimal pH of the pigment stability conditions was ranged from 4 to 6; the pigment was stable to time and heat, but unstable to light; among the oxidants, except for iron and copper ions, other metal particles has little effect on the pigment; the pigment was a salt--sensitive pigment; suitable for the use of acidic and weakly acidic foods. The natural yellow pigment in Chrysanthemum was safe and reliable. It had great development and utilization value in the rapidly developing food industry.
