摘要
本文介绍了保鲜湿米粉生产流程以及关键技术要点。从保鲜湿米粉的抗老化,保水,防腐三个方面阐述了当前保鲜湿米粉加工研究现状,并提出今后米粉研究的方向。
The production process and the key technical points of Fresh Rice Vermicelli were studied in this paper. This paper described the current research status of Fresh Rice Vermicelli processing from three aspects (anti-aging, water conservation, anticorrosive )and put forward the direction of the research in the future.
