高CO_2气调箱贮运杨梅技术研究 被引量:14

Transportation and storage of Chinese bayberry by controlled atmosphere box filled with high carbon dioxide

摘要 以‘荸荠’种杨梅为试材,研究气调箱(内充10%、15%或20%CO2)对杨梅贮运保鲜效果的影响。结果显示,杨梅在火车运输过程中,气调箱加冰处理,运输温度可以达到0~2℃之间,湿度接近100%,完全符合鲜果运输要求。气调箱中充入15%CO2可以保持杨梅0℃贮藏期间固酸比,抑制病害发生,基本保持了原有的色泽和口味。充入20%CO2尽管可以显著抑制果实病害发展,但导致果实无氧呼吸,产生醇味。使用气调箱可使杨梅0℃贮藏期达到14d以上,仍具有良好的感官品质。该法对于提高杨梅经济价值,实现远途物流保鲜具有重要的实践意义。 Bayberry fruit(Myrica rubra Sieb. Zucc,cv.Biqi) were held into auto-controlling atmosphere box(CAB) filled with about 10%,15% or 20% CO2,and transported for 24 h by train,then stored at(0 ± 1)℃.The postharvest qualities of bayberry were investigated at interval.Results showed that the temperature in CAB was maintained at 0~2℃ and RH at about 100%,which was suitable for transportation of fruit.Fruit in CAB filled with 15% or 20% CO2 had higher SSC/TA ratio,and lower decay incidence than control.However,20% CO2 treatment initiated the physiology disorder,caused odors and excess alcohol formation in fruit,which is unacceptable.The bayberry fruit treated by CAB still had good sensory quality significantly after 14 d of storage.In general,this new method can increase economic value,and suitable for transportation and sales industry of bayberry fruit.
