摘要
目的了解某市市售10类食品带染阪崎肠杆菌的数量和程度,从而评估其风险性。方法按照GB 4789.40-2010《食品微生物学检验阪崎肠杆菌检验》和实时荧光PCR法操作规程作定性、定量分析。结果查10类850份食品,有7类54份检出阪崎肠杆菌,检出率为6.4%。39份带菌量在30 MPN/100 g(ml)浓度范围以下,占72.3%;15份带菌量在30MPN/100 g(ml)浓度范围以上,占27.7%。结论小部分糖饼类、冰淇淋、巧克力坚果等食品阪崎肠杆菌带菌量较高,潜在一定的致病风险,要有针对性地加强监督管理。
[Objective]To understand the contamination degree and Enterobacter Sakazakii count in 10 kinds of food in markets so as to evaluate its riskiness. [Methods]The samples were tested in accordance with the national standard and teal-time fluorescence PCR method,then the results were analyzed qualitatively and quantitatively. [Results]Fifty four samples of 7 kinds of food were detected Enterobacter sakazakii from 850 samples of 10 kinds.The detection rate was 6.4%.Thirty nine samples(72.3%) were contaminated with concentration range under MPN/100 g(ml);15 samples(27.7%) were over 30 MPN/100 g(ml). [Conclusion]Small portion of candy cake,ice cream,chocolate,nuts and other foods are contaminated highelevels of Enterobacter sakazakii,That lead to the risk of illness.Therefore,the supervision and management should be strengthen to the point.
