摘要
东北酸菜属于叶类发酵蔬菜。经腌制加工后,形成风味独特、爽口、深受消费者喜爱的腌制品。为使东北酸菜产业稳定、快速、健康的发展,文章从东北酸菜产业的现状出发,分析了其在发展中存在的问题,并提出了相应的对策,进一步促进东北酸菜的发展。
Northeast sauerkraut belongs to the leafy fermentation vegetables.It is made into a pickle with special flavor and felicitous crisp through fermenting in anaerobic process,for the consumer liking.For steady,expeditious and healthy develop of Northeast sauerkraut industrial,the status and problems is analyzed in Northeast sauerkraut,and the suggestions were put forward for solving them,which will further promote the development of Northeast sauerkraut.
