摘要
目的:分析了解睢县超市销售及餐饮业的食用油卫生质量,为监督管理提供科学依据。方法:依据GB/T5009.37-2007食用植物油卫生标准的分析方法和《食品掺伪检测方法》中的食用油冷冻试验法进检验。结果:超市销售食用植物油各项合格率较高,但餐饮业食用植物油的问题较为突出,花生油和菜籽油的掺假掺杂率分别为57.02%和41.18%,特别是食堂、超市花生油的掺假掺杂率分别达60.49%、49.64%。棕榈油的过氧化值超标率为25.00%。结论:应加强对餐饮业,尤其是食堂食用油的监督管理力度。
Objective:To analyze sanitary quality of edible oil on sale in supermarket and catering and to provide the scientific basis for the supervision and management.Methods: According to Method for Analysis of Hygienic Standard of Edible Oils in GB/T5009.37-2007 and Determination Method for Adulterated Food,the frozen test for edible oil was carried.Results: The pass rate of edible vegetable oil on sale in supermarket was higher,but lower in catering.The adulterated rate for peanut oil and rapeseed oil were 57.02% and 41.18% respectively,especially for peanut oil in canteen and supermarket were 60.49% and 49.64%.The over-standard rate of peroxide value for palm oil was 25.00%.Conclusion: Supervision and management for edible oil in catering and canteen should be strengthened.
