摘要
本文通过对自制腰果酚的碘值分析，并短文献值和理论计算的比较，得出了以下结论：腰果酚的碘值结果不仅与其侧连上的不饱和双键有关，且舆苯环上的酚羟基有很大关系，因此，腰果酚碘值结果的变化便可表征其稳定性。同时，对腰果酚的储存倏件也做了简要的探讨。
