摘要
以贵州产油茶油为底物,以过氧化值为指标,研究了迷迭香、茶多酚、VE对油脂的抗氧化性能和对自由基DPPH的清除能力。结果表明,天然抗氧化剂对茶油具有显著的抗氧化活性;其抗氧化活性:迷迭香>茶多酚>VE,迷迭香在茶油中添加浓度为0.02%、0.04%、0.06%(质量分数)三个油样中,都具有较强的抗氧化活性,以0.02%效果最为明显;复合抗氧化剂的抗氧化效果优于单一抗氧化剂,以添加0.03%茶多酚+0.05%迷迭香+0.06%VE抗氧化复合剂效果显著,对DPPH.自由基清除率可达96.3%。
Camellia oleifera as the substrate from Guizhou oil and the peroxide value as the index, the antioxidation ettects of rosemary, tea polyphenols and VE to grease and the DPPH free radical scavenging were studied. The results show that natural antioxidants to Camellia oleifera had significant antioxidant activity. Their antioxidants were rosemary' s〉 TP' s〉 VE' s. The concentration of 0.02%, 0.04%, 0.06% (Mass) of the rosemary were added to the three Camellia oleifera samples, which all had very strong antioxidant activity. The concentration of 0.02% had the most obvious effect and the antioxidant effects of the complex natural antioxidants were better than the single antioxidants. Among them, the group, whose composition is 0.03%TP +0.05% rosemary +0.06% VE had the most significant antioxidant effect and whose DPPH. radical scavenging rate was 96.3%.
