摘要 乳酸菌中存在着一种重要的调控机制——双组分信号转导系统,它可以通过调控乳酸菌的多种生理生化过程来适应外界环境的变化。就双组分信号转导系统的组成、作用机制以及乳酸菌中调控耐酸机制、细菌素的合成和黏性吸附等生理过程的双组分信号转导系统作一综述。 Lactic acid bacteria(LAB)is very closely related to people's daily life,as not only widely used in food,medicine and animal feed industry,but also some LAB are helpful to people's health.Two-component signal transduction system(TCS)is a vital regulatory mechanism in LAB,which regulates a variety of physiological and biochemical processes to make LAB adapt to the changes in environment.The composition and mechanism of TCS were introduced in this review.The functions of TCSs in LAB were discussed in this paper,including acid-tolerance,bacteriocin production,attachment and other physiological processes.
