摘要
该文以没食子酸丙酯、茶多酚和异抗坏血酸钠作为抗氧化剂,研究了几种抗氧化剂对浒苔方便食品抗氧化效果及其对制品保藏性的影响。结果表明:单独使用时没食子酸丙酯、茶多酚其最佳浓度分别是60 mg/kg、200 mg/kg;异抗坏血酸钠效果不明显。三种抗氧化剂抗氧化效果:茶多酚>没食子酸丙酯>异抗坏血酸钠。此外,没食子酸丙酯和茶多酚具有协同增效作用。
Propyl gallate,tea polyphenols and sodium erythorbate are researched as the antioxidants in this paper,which have effects on the antioxidant properties and the preservation properties of the enteromorpha convenience food.The results show that when the antioxidant is used alone,the best concentration of the propyl gallate is 60mg/kg,the best concentration of the tea polyphenols is 200mg/kg.And there is little effect when the sodium erythorbate is used alone.The ability of three antioxidants is in order of tea polyphenols,Propyl gallate followed by sodium erythorbate.Moreover,the mixed-use of the propyl gallate and the tea polyphenols has cooperating effect.
