摘要
膳食纤维作为一种来源丰富的功能性食品原料,具有重要的生理功能——能够降低便秘、结肠癌、肥胖、心血管疾病、糖尿病等慢性病的发病率。文中就膳食纤维分析方法的研究进展进行了综述,介绍了传统的分析方法,以及近红外分析法、尺寸排阻液相色谱法、高效阴离子色谱法等现代仪器分析方法。
As a resource - rich and functional food ingredients, dietary fiber has many important physiological functions, which can prevent constipation, colon cancer, obesity, cardiovascular disease, diabetes and other chronic disease. In this paper, analysis methods of dietary fiber are reviewed to introduce the traditional methods as well as Near- Infrared Reflectance Spectroscopy(NIRS) , size exclusion liquid chromatographic method(SEC), high -performance anion- exchange chromatography(HPAEC) and other modern instrumental analysis methods. The purpose is to provide necessary references to speed the study process of dietary fiber of our country.
