藠头叶中水溶性膳食纤维提取工艺 被引量:8

摘要 以藠头叶为原料,采用酸水解法,在对料液比、提取液pH值、提取温度、提取时间进行单因素试验的基础上,采用L9(34)正交试验对藠头叶中可溶性膳食纤维提取工艺进行优化。结果表明:藠头叶中提取水溶性膳食纤维的最适工艺条件为料液比1:15(g/mL)、pH3.0、提取温度90℃、提取时间90min,在此条件下,水溶性膳食纤维提取率为9.85%,持水率5.5g/g,溶胀力4.8mL/g。 Allium chinense leaves were used as the raw materials to conduct acid hydrolysis for extracting water-soluble dietary fiber. The optimal extraction processing parameters were explored by single-factor and orthogonal experiments through evaluating the effects of material-liquid ratio, extraction pH, extraction temperature and extraction time on extraction rate of water-soluble dietary fiber. Results indicated that the optimal extraction processing parameters for water-soluble dietary fiber were material-liquid ratio of 1:15 (g/mL), pH 3.0, extraction temperature of 90 ℃and extraction time of 90 min. The extraction rate of water-soluble dietary fiber from Allium chinense leaves was up to 9.85%. The water-holding capacity and swelling power of the water-soluble dietary fiber were 5.5 g/g and 4.8 mL/g, respectively.
