摘要 【目的】对采自两个不同区域的72种野生樱桃李进行营养成分的分析,为进一步开发野生樱桃李的食用价值提供理论依据。【方法】以采自新疆伊犁霍城大西沟的野生樱桃李及栽培于乌鲁木齐安宁渠的樱桃李为原料,采用直接滴定,2,4-二硝基苯肼法及液相色谱法对72个不同类型的新疆野生樱桃李中还原性糖、总糖及总酸;18个类型樱桃李中VC5、种樱桃李中总氨基酸含量进行测定。【结果】72个不同类型的新疆野生樱桃李中含有较为丰富的还原性糖、总糖及总酸,其最高含量分别为11.14、18.29及4.15 g/100 g;18种樱桃李中VC含量最高可达10 mg/100 g;5种樱桃李中总氨基酸含量超过2%。【结论】采自于两个不同区域的野生樱桃李中营养成分含量有较大差异。 【Objiective】For further developping the dietary property of agrestal prunes divaricator of Xinjiang Yili,the nutrient analysis of 72 categories of prunes divaricator which is picked from two different area was carried out in this paper.【Methord】The nutrient analysis of 72 categories of prunes divaricator which was gained from two different areas,analyzed by titration and 2,4-dinitrophenyl hydrazine method and the Automatic Amino Acid Analyzer.【Result】The results shows that the 72 categories of prunes divaricator of Xinjiang Yili contain abundant reductive saccharide,total saccharide and the total acid.And the content of Vitamin C in 18 categories of prunes divaricator was up to 10 mg/100 g.The level of total amino acids in 5 categories of prunes divaricator was more than 2%.【Conclusion】There was biggish otherness in nutrient analysis of prunes divaricator which is picked from two different area.
