低温肉制品是国内外肉品未来发展的主要趋势,栅栏技术是多种保藏技术科学、合理的结合,它不仅可有效延长肉类的保质期,而且有利于保持肉类的营养和风味。本文主要介绍了低温肉制品保藏中涉及的主要栅栏因子,以及栅栏技术在低温肉制品加工和保藏过程中的应用,并对栅栏技术的未来发展趋势进行了展望。
The low temperature meat is the main trend of the future meat development, Hurdle technology is the scientific and rational combination made up of many technologies.
