摘要 近年来,我国食用植物油生产和消费量明显增长,对油的品质检测也越来越受关注。目前,介电特性用于食用植物油品质检测越来越受人们的重视。本文分析了食用植物油介电特性机制和介电特性测试原理,综述了目前出现的几种有关食用植物油介电特性的测试方法和测试系统以及与食用油介电特性相关的如频率、温度等因素,介绍了基于食用油介电特性研究方法上的其它食品的介电特性研究。 In recent years,with the production and consumption of edible vegetable oil growing,the quality of edibJe vegetable oil detection is attracting increasing attention.The test principle of dielectric properties on edible plants oil and the dielectric properties of edible plants oil were analyzed in this paper. The present situation of several related to edible vegetable oil dielectric properties of test methods and test systems as well as with the dielectric properties of oil-related, such as frequency, temperature and other factors, were overviewed. The dielectric properties of oil based research methods on the dielectric aroeerties of other food research were described.
