摘要
通过对不同的酶类及水解方式得到的产物进行成分分析及其抗氧化活性的初步探讨,筛选出近江牡蛎活性物质的最佳提取方案,即采用超声波破碎结合双酶水解的制备方法。在此条件下,水解度达21.7%,对羟自由基的清除率达到22.6%。制得的活性物质中,功能性短肽的含量为13.31mg/mL,总氨基酸含量为7.60mg/mL。采用3%的活性炭对活性提取物处理后脱腥脱色的效果较好,但发现营养成分损失较大,其中短肽的损失达36.1%,氨基酸损失达40.6%。
In order to find the best methods of extracting active substance from Ostrea Rivularis Gould,the nutrient content and the activity of oxidation resistance were used as evaluating indicator to assess the products which were made by different patterns of proteolysis.The result showed that ultrasonic cell disrupting combined with hydrolyzed by two kinds of prolease was the best choice. On this condition, the degree of hydrolysis reached 21.7% ,the clearance rate of hydroxy radical reached 22.6%.The small peptide contents in this active substance were 13.31mg/mL,while the total amino acid contents were 7.60 mg/mL.The loss of small peptide in the active substance was 36.1% after eluted fishy smell and color by 3% active carbon, and the loss of amino acid was 40.6%.
