摘要
小麦品质的优劣决定其最终用途,最终用途的多样化也使小麦品质的检测技术和方法不断多样化。本文概括综述了快速检测小麦品质的技术方法,并利用这些技术方法对试验样品的籽粒硬度、籽粒蛋白含量、湿面筋含量、沉降值、面粉揉混特性、淀粉品质特性等进行检测分析,认为单籽粒谷物特性测定仪(SKCS)、近红外光谱技术(NIR)、面筋仪、Zeleny沉降值、揉混仪、快速粘度分析仪(Rapid Visco Analyzer,RVA)等形成了一套快速检测小麦籽粒品质、面粉品质和面粉淀粉品质的体系。该体系对于小麦品质育种早代的品质检测评价及快速、准确检测大批量商品小麦品质具有重要意义。
The end use of wheat is determined by its quality,and various testing methods occurre with the diverse end use.In this paper,the rapid testing methods of wheat quality were summarized and were also used to test the quality of the experimental materials including grain hardness,grain protein content,wet gluten content,sedimentation value,dough mixing characters and starch characteristics.The results showed that the Single Kernel Characteristic System(SKCS),Near Infrared(NIR),gluten machine,Zeleny sedimentation,Mixograph and Rapid Visco Analyzer(RVA) composed the rapid testing system of wheat grain quality,dough quality and starch quality.This rapid testing system would play an important role in the early selection during wheat quality breeding and the rapid quality evaluation of large quantity of commercial wheat.
