摘要
分析结果表明,水竹笋可食部分占49%~53%,箨重47%~51%,不带蒲头,笋肉色泽白净略带黄绿。竹笋含丰富的蛋白质和无机元素,在众多的食用笋中,是含量最高的竹种之一。竹笋的粗纤维含量为063%~071%,含水量为91%。竹笋脆爽味美,风味独特。
