摘要
从传统发酵食品中分离筛选高产γ-氨基丁酸(GABA)的乳酸菌。采用薄层层析法和高效液相色谱法对分离出的82株乳酸菌的GABA生产能力进行定性和定量分析,筛选出1株高产GABA的乳酸菌S35,其产量达到4.52 g/L。经生理生化鉴定、API试剂鉴定和16S rRNA序列分析,菌株S35为植物乳杆菌。
This study focused on screening lactic acid bacteria with high production capacity of γ-amino butyric acid(GABA) from traditional fermented food.The GABA production of 82 lactic acid bacteria strains was measured by thin layer chromatography(TLC) and high performance liquid chromatography(HPLC).The strain S35 with high production capacity of GABA was screened and its GABA yield reached 4.52 g/L.Finally,the strain S35 was identified as Lactobacillus plantarum by identification of physical,biochemical and identification of API 50 CHL and 16S rRNA sequence.
