枥乙女和维塔娜草莓品种的香味成分分析 被引量:4

摘要 以日本草莓品种枥乙女和美国草莓品种维塔娜为试材,采用顶空固相微萃取和气相色谱-质谱联用技术,分析2个品种草莓果实挥发物中特征香味成分的异同。结果表明:枥乙女主要由香味醇(橙花叔醇、沉香醇)及4-甲氧基-2,5-二甲基3(2H)-呋喃酮等决定;维塔娜主要香味物质有己酸乙酯、乙酸乙酯、丁酸乙酯、5-庚基二氢-2(3H)-呋喃(、Z)-7,11-二甲基-3-甲叉-1,6,10-十二烷三烯。 The head space-solid phase microextraction and gas chromatography-mass spectrometry was applied to analyze aroma composition of the two strawberry cultivars(Akihime and Ventana).The results showed that the aroma properties in Akihime depended on aroma alcohols(1,6-Octadien-3-ol,3,7-dimethyl and 1,6,10-Dodecatrien-3-ol,3,7,11-trimethyl-) and 3(2H)-furanone,4-methoxy-2,5-dimethyl-;the aroma properties in Ventana depended on hexanoic acid ethyl ester,acetic acid ethyl ester,butanoic acid ethyl ester,2(3H)-furanone,5-heptyldihydro and(Z)-1,6,10-dodecatriene,7,11-dimethyl-3-methylene.
