摘要
经紫外(UV)诱变后,所获得的啤酒酵母单倍体07-13的营养缺陷型全部是组氨酸要求型,糖化酵母单倍体1752-20和1815-21的营养缺陷型除少部分外大多数都是腺嘌呤要求型。研究表明:UV减弱了腺嘌呤缺陷型单倍体的交配能力,而对其它营养缺陷型单倍体的交配能力无甚影响;同时,经UV照射后降低了所有单倍体突变株的啤酒发酵速率,但是对糖化酵母单倍体的糊精发酵能力无甚影响。
By means of UV mutagensis, auxotrophic mutants of a brewing yeast hap-loid 07-13 and two haploids of S, diastaticus 1752-20 and 1815-21 were obtained. All the mutants of 07-13 showed the requirement for histidine and most of the mutants of 1752-20 and 1815-21 appeared to be ade auxotrophs except for a few mutants. Further investigation demonstrated that UV light decreased the mating ability of ade auxotrophic haploids and had no significant effect on the mating ability of other auxotrophic haploids. It also showed that the auxotrophic haploids all possessed decreased brewing perform ances in 150 ml brewing fermentation compared to their parental haploid strains and that the dextrin-fermenting ability of haploid mutants of S, diastaticus were not changed.
