响应面法优化固定化酶改善酸法大豆浓缩蛋白凝胶性的研究

Study on Improving the Gel Capacity of Acid Leached Soy Protein Concentrations by Immobilized Transglutaminase Using Response Surface Method

摘要 利用固定化谷氨酰胺转胺酶(MTG)对酸法大豆浓缩蛋白(SPC)进行改性,采用响应面法优化改性的工艺条件。结果表明,当固定化MTG添加量3.84U/g、反应温度49.57℃,pH值6.03、反应时间2.04h时,响应面优化后的SPC凝胶性为7.33kcp,比未改性时提高27.26%。 In this paper, acid leached soy protein concentration (SPC) was modified by immobilized transglutaminase (MTG), and the use of response surface optimization SPC process conditions. The results show that when the addition of immobilized MTG was 3.84 U/g, temperature was 49.57℃, pH was 6.03, and time was 2.04 h, the modified SPC gel capacity was 7.33 kep, increased by 27.26% compared with that of unmodified.
