摘要
实施供应链管理是解决我国猪肉质量安全问题的有效途径,超市作为优质猪肉供应链的主流销售终端,是控制猪肉质量安全的最后关口,应具有良好质量安全行为。本文认为超市良好质量安全行为包括供应链物流、环境卫生管理、质量追溯和辅助管理等4方面,它们既独立发挥作用又相互协同促进;超市良好质量安全行为的基础是行为意识、关键是过程控制、目标态是协调、形成过程具有动态性;为加快超市良好质量安全行为的形成进程,应增强意识、提高能力、加大监管并营造环境。
Actualizing supply chain management is an effective way to solve the problem in pork quality and safety.As the mainstream sale terminal,supermarket is the final channel in controlling the quality of pork and should have good quality safety behavior.The paper argue that supermarket good quality safety actions include:supply chain logistics, environmental health management,quality traceability and auxiliary management,the four factors both independent and synergistic.Good quality safety behavior is based on behavioral consciousness,its key is process control,the target is harmonious,and the forming process is dynamics.To accelerate the forming process of quality safety behavior,the supermarket should enhance consciousness,improve theirability,strengthen supervision and build environment.
