2001-2008年海口市月饼微生物学检测结果分析 被引量:2

Analysis of results in microbiological monitoring of mooncake in Haikou in 2001-2008

摘要 目的:了解海口市月饼的卫生质量状况,为加强此类食品的监督管理提供科学依据。方法:按国标对海口市2001-2008年月饼进行微生物学项目检测并对检测结果资料进行统计分析。结果:8年来共检测月饼1669份,合格1599份,合格率为95.8%。不同年度间月饼合格率有所差异(χ2=20.45,P<0.01);不同馅类间月饼合格率差异具有显著性(χ2=17.84,P<0.01)。细菌总数合格率最低是伍仁月饼;霉菌总数合格率以水果月饼最低;大肠菌群合格率则以豆莲蓉月饼最低;所有样品均未检出致病菌。不同经营单位的月饼合格率差异无显著性(χ2=1.91,P>0.05)。结论:结果表明,海口市月饼微生物学卫生状况总体良好,但不同年度和不同馅类月饼微生物项目合格率间存在差异,这仍有待提高。 Objective:Haikou City,the hygienic quality of moon cake,in order to strengthen supervision and management of such foods provide a scientific basis.Methods: GB moon cake in Haikou City,microbiology 2001-2008 project testing and test results were statistically analyzed.Results: Moon cake were detected in 8 years were 1669,1599 were eligible,95.8% pass rate.Different years the difference between the passing rate of moon cake(χ2= 20.45,P〈0.01);Different passing rate of moon cake stuffing class differences between significant(χ2=17.84,P〈0.01).The lowest passing rate of the total number of bacteria is Nuts moon cake;fungal fruit moon cake the total number of the lowest pass rate;coliform compliance rates of the beans,lotus seed paste moon cake minimum;pathogenic bacteria were not detected in all samples.Different business units of moon cake pass rate was no significant difference(χ2= 1.91,P〉0.05).Conclusion: The results show that the moon cake Microbiology Haikou health is generally good,but different years and different class of moon cake stuffing microbial differences between the passing rate of the project,which is still to be improved.
