摘要
天然色素的制备及使用在我国具有悠久的历史,目前我国的天然色素产业已初具规模,年产量约1.8万～2万t。其中有些品种还远销国外。随着食品工业的不断蓬勃壮大,食用天然色素的发展具有广阔前景。我们应立足于国内市场,开拓国际市场,大力发展“天然、营养、多功能”的食用色素。
The history since the preparation and application of natural pigments has been quite long in China. Presently the natural pigment industry has been on a fair scale in China, with yearly output reaching 18000 - 20000 tons, and some of which being exported abroad. With the constantly flourishing rise of the food industry domestically, the development of natural pigments for f ood will unfold broad prqspects before us. At this situation, we should exploit an international market to develop natural, nourishing and multi - functional food pigments with great efforts, w hile keeping a foothold still in the home market.
