摘要
研究了在不同气体和浓度90%N2、95%N2、100%N2、50%CO2、70%CO2、100%CO2,及不同温度15℃、25℃、35℃下,储藏大米其脂肪酸值的变化。结果表明:CO2气调储藏各种浓度和温度下脂肪酸值含量变化明显低于N2,温度对脂肪酸值的影响显著。
The change of fatty acid in stored rice were studied in different gas,concentration and temperature,i.e.N2 with concentration of 90%,95%,100%,CO2 50%,70%,100% and temperature 15℃,25℃ and 35℃.The results showed that the changes of fatty acid value in rice stored in CO2 with different concentration and temperature were less than that of N2.Temperature effected significantly on fatty acid value and the minimal change was in 15℃.
