江苏地区2008年~2009年食源性致病菌监测研究 被引量:44

摘要 目的:主动监测和评价江苏地区各类食品致病菌污染状况,为控制和降低食源性疾病提供依据。方法:采集食物样本分别进行沙门菌、单增李斯特菌、大肠杆菌O157:H7、阪崎肠杆菌、金黄色葡萄球菌、空肠弯曲菌和副溶血性弧菌分离并作生化及血清学鉴定。结果:2008年和2009年分别监测了江苏8个监测点的生畜禽肉、熟肉制品、生食蔬菜、水产品各类样品764件和1 071件。沙门菌检出率分别为5.9%和2.7%,单核细胞增生性李斯特菌检出率分别为6.5%和5.0%;副溶血性弧菌检出率分别为15.9%和7.8%;金黄色葡萄球菌检出率分别为5.6%和5.0%;大肠杆菌O157:H7检出1株,检出率0.3%(2009年);阪崎肠杆菌检出率5%(2008年);空肠弯曲菌未检出。70株沙门氏菌经血清型鉴定,分离出8种血清型,主要是里定沙门菌、鸭沙门菌、德尔卑沙门菌和鼠伤寒沙门菌。结论:江苏地区食品存在食源性致病菌污染,其中水产品和生肉是主要污染食品,而市场熟肉和生食水产品导致食源性疾病的风险较高。 Objective:To determine the contamination situation of main food--borne pathogens in food, to identify high-- risk foods, and to provide the basis for food--borne diseases prevention and control in J iangsu province. Method: Salmonella, Listeria monocytogenes, Escherichia coli O157 : H7, Campylobacter jejuni, and Vibrio parahaemolyticus were isolated and tested for biochemical characteristic, serotype according to national standard GB/T4789. Results: Total 764 and 1 071 food samples were detected in 8 monitoring sites respectively in 2008 and in 2009, including raw meat, raw poultry, cooked meat products, raw vegetables, aquatic products, and so on. The detection rates of Saimonella were 5.9% and 2.7% respectively; Listeria monocytogenes were 6. 5% and 5. 0% respectively; Vibrio parahaemolyticus were 15. 9% and 7. 8% respectively; Staphylococcus aureus were 5.6% and 5.0% respectively. Escherichia coli O157 : H7 was detected in 2009 and the detection rate was 0. 3% ; Enterobacter sakazakii was detected in 2008 and the detection rate was 5.0%. Campylobacter jejuni was not detected in both two years. There were 8 serological types to be separated by 70 plants of Saimonella, and most of them were Salmonella in fixed, Salmonella anatum, Salmonella derby and Salmonella typhimurium. Conclusion: Contamination by food-- borne pathogens existed in food in Jiangsu province. Aquatic products and raw meat were main food suffered. Additionally, cooked meat and raw aquatic products could cause food--borne diseases with more possibility.
