摘要
天然高分子材料衍生物壳聚糖由于其良好的功能特性,近年来作为天然保鲜材料在果蔬、肉制品、水产品等各类食品的包装中已有大量研究报道。本文在对壳聚糖保鲜包装材料的性能进行总结的基础上,对近年来其在果蔬、肉制品、水产品等食品的保鲜包装中的研究及应用进展进行了综述介绍。
As its good founctional properties,chitosan,a kind of derivate of natural polymer,was widely used and studied as the natural fresh-keeping materials for fruits and vegetables,meat products,aquatic foods etc..In the current paper,the properties of chitosan which were fit for being applicated as the fresh-keeping materials for food were summarized,progress for applications of chitosan in the fresh keeping of fruits and vegetables,meat products and aquatic foods was reported.
