摘要 为了研究壳聚糖涂膜鱼腥草在不同温度下的保鲜效果,以新鲜鱼腥草为原料,用0.05%抗坏血酸+0.1%壳聚糖涂膜鱼腥草,用0.07 mm PE食品保鲜袋包装,分别在16-20℃,0-5℃,6-10℃条件下贮藏,并对其可食率、失重率、腐烂率、呼吸强度、过氧化物酶、多酚氧化酶、还原糖和感官品质变化等进行研究。结果表明,用0.05%抗坏血酸+0.1%壳聚糖涂膜鱼腥草,在0-5℃条件下能有效抑制呼吸强度,降低鱼腥草多酚氧化酶、过氧化物酶的活性,明显延长鱼腥草的贮藏期。 The edible rate,weight loss rate,decay rate,respiration rate,peroxidase,polyphenol oxidase,reducing sugar and sensory quality of fresh Houttuyniae treated with 0.05% ascorbic acid and 0.1% chitosan and packed by 0.07 mm PE food preservation bags were analyzed to study the effect of chitosan on preservation of Houttuyniae under different temperature.The results showed that the storage period of Houttuyniae treated with 0.05% ascorbic acid and 0.1% chitosan was significantly prolonged at 0~5℃ by inhibiting its respiration intensity and reducing its activity of peroxidase and polyphenol oxidase.
