摘要
以山竺果皮为原料,利用微波辅助提取山竺红色素,研究了提取工艺的最优组合及山竺红色素的稳定性,结果表明:料液比为1∶6,微波功率为500W,微波辐射8min,山竺红色素收率可达8.4%。山竺红色素是一种稳定性良好的食用天然色素,其耐热、耐光性强,酸性环境中稳定性好,常用食品添加剂、氧化剂、还原剂及Na+,K+,Ca2+,Mg2+,Zn2+,Al3+等金属离子对该色素无影响,但Fe3+对色素有破坏作用。
A red pigment was extracted from of Garcinia mangostana L.by microwave and its stability were studied.The results showed that the ratio of material liquid 1∶6,power of microwave 500W,the time of microwave 8min,and the red pigment extraction rate was 8.4%.It is a good natural pigment with fine stability to acidity,light,heat.It had not effected by commonly food additives,oxidant,reducer and Na+,K+,Ca2+,Mg2+,Zn2+,Al3+,but Fe3+ greatly destroyed action.
