摘要
以长白山蒙古栎材为原料,制成32mm厚径切板材,经露天自然风干、烘烤、机械加工等工艺制造葡萄酒酿造用橡木桶。详细介绍了橡木桶的生产工艺流程,对比分析了长白山蒙古栎材橡木桶与法国制橡木桶酿造的葡萄酒有效成分和特点,讨论了葡萄种类对葡萄酒中单宁质量浓度的影响。结果表明:在相同条件下,长白山蒙古栎材橡木桶酿造的葡萄酒中所含的丁香酸、香草酸、丁香苷酸、松柏醛及多酚等成分均高于法国制橡木桶;其酿酒性能指标兼具法国桶和美国桶特点,对葡萄酒口感和香气的影响均比较柔和,可以用于酿造橡木香、果香、酒香协调幽雅的葡萄酒;采用长白山蒙古栎材橡木桶酿造的赤霞珠干红葡萄酒中的单宁质量浓度高于品丽珠干红葡萄酒,因此,赤霞珠干红葡萄酒更适宜长期陈酿。
Using the wood of Quercus mongolica from Changbai Mountains as raw materials,radial cut lumber in 32mm thickness was made and to produce the high quality oak barrel for grape wine brewing by natural air drying,baking,and mechanical processing. The production process of oak barrel was described in detail. Effective components and properties of grape wine brewed by oak barrel from self-production and France were contrasted and analyzed. Then,effect of grape category on tannin content in grape wine was discussed. Results show that there are more syringic acid,vanillic acid,syringin,coniferaldehyde,and polyphenol in the grape wine brewed by the oak barrel made of Q. mongolica wood from Changbai Mountains than by the oak barrel made in France. The oak barrel made of Q. mongolica wood from Changbai Mountains,possessing the advantages of French and American oak barrels,has moderate effects on aroma and taste of grape wine and can be used to brew grape wine with high quality. Tannin content in cabernet sauvignon dry red wine brewed by the oak barrel made of Q. mongolica wood is higher than that in cabernet franc dry red wine,thus cabernet sauvignon dry red wine is adapted to be brewed for a long time.
