摘要
对贵州省3个林场4个竹笋品种营养品质进行分析。结果表明:同一产区山脊、山沟和山坡竹笋品质没有差异,不同产区之间竹笋营养品质有显著差异。其中,桐梓金佛山方竹笋(Chimonobambusa utilis)蛋白质、粗纤维、粗脂肪及氮、磷、钾含量均显著高于其他产区竹笋品种,赤水楠竹冬笋(Phyllostachys pubescens)则以低纤维素、高维生素使得品质和口感优于赤水楠竹春笋(Phyllostachys pubescens)和"黎平楠竹春笋"(Phyllostachys pubescens)。
Quality of bamboo - shoot from different regions of Guizhou was investigated in the present study. No significant differences were obtained in quality among the different sites within same farm, however, obvious differences in quality were investigated among the bamboo - shoots from different regions. Compared with other types, "Jinfo Mountain Square Bamboo - shoot" ( Chimonobambusa utilis) produced in the forests at Tongzi County demonstrated significantly higher contents of protein, crude fiber, total N, P, and K. Vc content of "Nanzhu Winter Bamboo - shoot" ( Phyllostachys pubescens) produced from Chishui was higher, furthermore, its content of crude fiber was lower than that of "Nanzhu Spring Bamboo - shoot" from Chishui and "Nanzhu Spring Bamboo -shoot" from Liping, which makes higher quality and better taste for "Nanzhu Winter Bamboo - shoot" from Chishui.
