Effects of different food on arsenic concentration in drinking water of endemic arsenism area

摘要 目的观察不同食物对地方性砷中毒病区饮用水砷浓度的影响。方法取菠菜、胡萝卜、瘦猪肉、豆腐、大米、玉米各1、2.5、5、10 g,牛奶5、10、20、30 ml,分别和50 ml病区水混合加热至沸腾,取上清用超低温捕集-氢化物发生-原子吸收分光光度计检测砷浓度。结果加入不同质量菠菜的4组,水砷浓度显著降低(P<0.05);2.5、5 g豆腐组和1、2.5 g瘦猪肉组,水砷浓度显著升高(P<0.05);大米和玉米各组水砷浓度显著升高(P<0.05)。结论菠菜可能存在降低水砷浓度的作用,瘦猪肉、豆腐、大米、玉米可能使水砷浓度升高。 Objective To observe the effects of different food on arsenic concentration in drinking water of endemic arsenism area.Methods 1,2.5,5,10 g of Spinach,carrot,lean pork,tofu,rice,corn and 5,10,20,30 ml of milk were heated in drinking water of endemic arsenism area,respectively.Then the concentration of arsenic in the supernatant liquor was determined with cold trap hydride generation atomic Absorption spectrometry.Results The arsenic concentration in drinking water was significantly decrease by Spinach(P〈 0.05);Moreover,the increase of arsenic concentration in drinking water was significantly exacerbated by 2.5,5 of tofu and 1,2.5 g of lean pork(P 〈0.05);The same result was also found in rice and corn(P〈 0.05).Conclusions It is possible that Spinach can decrease arsenic concentration,whereas lean pork,tofu,rice,corn can increase arsenic concentration in drinking water.
