摘要
对六种咸水鱼类和五种淡水鱼类的营养物质(氨基酸和营养微量元素)的含量作了比较研究。认为淡水鱼类与咸水鱼类的氨基酸和营养物质的含量相近似,总体上无显著差异。认为咸水鱼类的营养价值比淡水鱼类高的传统观点缺乏科学根据,应加以修正。
Nutrientional composition and comparative analysis in 6 kinds sea water fish and 5 kinds fresh water fish were reported. The experimental results showed nutrientional composition and amino acid in sea water fishs and ha water fish are not markedly different. The traditional concept that nutritive value of sea water fishes is higher than fresh water dries lacks of scientific ground and needs correction.
