摘要
以PE膜包装冷藏2个月的富士苹果为试材,研究4.4、20℃条件下2%、10%CO2处理对果实生理及品质的影响。结果表明:相同浓度CO2处理,随着货架温度的升高,富士苹果对CO2伤害越不敏感;果实在4.4℃条件下比20℃下更易出现衰老症状,品质下降。20℃条件下结合10%CO2处理对果实在抵抗逆境胁迫方面具有一定的调节作用,延缓了果实的快速衰老,果肉硬度大,Vc含量高,MDA积累少。经解剖分析、品尝对比后认为,货架期无明显CO2伤害。
The purpose of this work was to estimate the changes of physiology and quality of 'Fuji' apples kept at 4.4℃ and 20℃ in 2% and 10% CO2 concentration during shelf-life.The test material was refrigerated in PE film for 2 months.The results showed that treated with the same CO2 concentration,as the temperature increases,'Fuji' apples were insensitive to CO2 injury.The performances under 4.4℃ was worse than 20℃ treatment,which caused senescence and the quality decreased.10% CO2 permitd good quality retention at 20℃,regulated the ability to resisting force of adversity and delayed the quick senescence process.The fruit had higher firmness and vitamin C content,product of peroxidated membrance lipoid(MDA)accumulated little.Through analysis and contrast,there was no significant CO2 injury was detected.
