摘要 以壳聚糖为成膜基质,复和抑菌、杀菌等物质,探讨了不同壳聚糖涂膜复合物对草莓的保鲜效果。结果表明:供试壳聚糖涂膜复合物均不同程度降低了草莓果实的失重率和呼吸强度,延缓了果实维生素C、有机酸和可溶性糖含量的下降,抑制了腐烂的发生;壳聚糖与那他霉素复合的涂膜液保鲜效果最佳,常温下采后5 d腐烂指数仅为对照的6.5%,总酸含量为对照的122.8%,维生素C为对照的177.9%。 As a film-forming substrate,chitosan was blended with microbiostatic materials such as sodium dehydroacetate, natamycin,sodium benzoate and calcium lactate, and the fresh-keeping effects of different chitosan coating compounds on strawberry during storage were studied. The results showed that all the compounds could reduce the weight loss and respiratory intensity of the strawberry to a certain extent,retard the decline of the fruit's vitamin C, organic acids and soluble solids, and inhibit the rot occurrence. It was found that the compound liquid of chitosan and natamycin had the best fresh-keeping effect on the strawberry,and the rot index,total acids and vitamin C of the strawberry on the 5th day after picking were respectively 6.5%, 122.8% and 177.9% as much as those of the control under normal air temperature.
