Collagen protein is a kind of PS - T, containing a little galactose and glucose, and it is the basis of extracellular matrix. In this paper, its molecular structure, classification, physical and chemical properties and biological properties were mostly represented, and its application developments on medicine, aesthetic health care, food, feed and other industries were also introduced.
