摘要
本文主要概述了β-甘露聚糖酶作用底物的方式、不同生物来源的β-甘露聚糖酶的一般特性及其遗传的物质基础和该酶在工业、医药、食品方面的广泛应用。
This paper mainly review the recent development of β - mannanase. In enzymatic action pattern on subtrate, and its general properties from different organism. The enzwnatic gene structure and its broad applications in industry, pharmacy and bo making are briefly summerized.
