摘要
以干品沙海参为原料,对其营养成分进行研究,考察了沙海参的蛋白质、脂肪、水分、灰分、氨基酸以及金属元素含量差异,并研究了沙海参多糖的分子量和组成。实验结果表明,干品沙海参含有较多的蛋白质,其次是水分。其中鲜味氨基酸占蛋白质总量32·44%,抗氧化氨基酸含量14·79%,羟脯氨酸10·42%。沙海参多糖重均分子量(Mw)是98748Da,并含有较多的羟基、氨基、羧基、硫酸酯,都为硫酸软骨素E。
Taking dry holothuria arenicola simper as raw material, it, s nutrient contents were mainly studied.The differences about its protein,fat,water,ash ,amino acid and metal were investigated ,and its molecular weight and composition.The result showed that dry holothuria arenicola simper contained more protein,the next is water.The proportion of essential amino acids in protein was 32.44%, amino acids of oxidation resistance was 14.79%, hydroxyproline was 10.42%.Holothuria arenicola simper mucopolysaccharide' s Mw was 98748Da,it also contained more hydroxide radical, amino, carboxyl, sulfuric acid ester,they were also chondroitin sulfate E.
