摘要
研究了太湖秀丽白虾抱卵群体生物学特征,并对其肌肉营养价值进行评价。于2008年4—5月在太湖三山岛水域采集秀丽白虾(Exopalaemon modestus)抱卵虾样本,对生物学指标进行了测量,并对肌肉营养成分进行了测定分析。抱卵群体平均全长、平均体长和平均体重分别为59.1mm、47.5mm和1.57g,绝对怀卵量介于95~389粒之间,平均为212粒,相对怀卵量介于91~145粒/g之间,平均为113粒/g。胚胎发育各阶段卵径差异显著,囊胚期、无节幼体期和溢状幼体期分别为1.01mm、1.07mm和1.16mm。抱卵虾肌肉水分含量为79.63%,粗蛋白、粗脂肪和粗灰分含量分别为16.57%、1.49%和1.40%,能量密度为4.597KJ/g。肌肉干样赖氨酸和牛磺酸含量分别为6.70%和0.52%,必需氨基酸指数为65.81;不饱和脂肪酸含量为65.52%,其中单不饱和脂肪酸含量显著高于多不饱和脂肪酸含量,比值为1.49。钙磷比、锌铜比和锌铁比分别为0.84、3.26和2.87。太湖秀丽白虾抱卵群体表现出明显的小型化趋势,其主要营养指标均低于生长期。
Abstract: Studies on biological characteristics and nutritive values in muscle of spawning colony of Exopalaemon modestus in Taihu Lake were carried out in 2008. From April to May in 2008, incubatory shrimps were collected from waters of Sanshan Island in Taihu Lake and relational biological characters were mensurated, and nutritional components in muscle were also tested and analyzed. It showed that mean values of total length, body length and body weight were 59.1 mm, 47.5 mm and 1.57g respectively, and the amplitude of absolute fecundity and relative fecundity were 95 -389 eggs and 91 - 145 eggs/g body weight, with the average of 212 eggs and 113 eggs/g body weight. There were significant differences of egg diameter in different stages of embryonic development, and mean value in blastula stage, nauplius stage and zoae stage showed 1.01 mm, 1.07mm and 1.16mm respectively. The result showed that content of moisture was 79.63%, crude protein 16.57%, crude fat 1.49% and crude ash 1.40% based on fresh muscle, and the energy density showed 4. 597kJ/g. Contents of lysine and taurine based on dry muscle were 6.70% and 0.52% respectively, and the essential amino acids index was 65.81. At the same time, content of unsaturated fatty acids was 65.52%, and content of monounsaturated fatty acids was significantly higher than that of polyunsaturated fatty acids with the ratio of 1.49. Ratio of calcium to phosphorus was 0.84, while ratio of zinc to copper was 3.26 and zinc to iron was 2.87. By means of data comparison, remarkable trend of miniaturization could be found, and major nutritional indexes in muscle of spawning colony were inferior to growth colony.
