摘要
为研究套袋对葡萄果实的花色素苷种类与相对含量的影响,以巨峰葡萄二次果为试材,利用甲醇和超声波提取葡萄中的花色素苷,采用高效液相色谱进行测定,结果表明,不套袋果实以甲基花青素3-O-葡萄糖、甲基花青素3-O-(6-O-对香豆酰)葡萄糖苷和3'-甲花翠素3-O-葡萄糖苷为主,构成了不套袋果实的主要呈色成分,表现为紫色。套袋果实以二甲花翠素3-O-葡萄糖苷、二甲花翠素3-O(-6-O-对香豆酰)葡萄糖苷和甲基花青素3-O-葡萄糖苷为主,构成了套袋果实的主要呈色成分,表现为紫红色。套袋后葡萄果实表面光洁,色泽更鲜艳。
In order to investigate the influences of bagging on anthocyanin compositions and relative contents, Kyoho second fruits were used as experimental materials in this study. Anthocyanin in grape was extracted by methanol and ultrasonic, and detected by HPLC. The results showed that, 9 kinds ofanthocyanins were detected in Kyoho grape. The main anthocyanins were Pn3-O-Glu, Pn3-O (6-O-p-Coum)-Glu and Pt3-O-Glu, which were the main coloration compositions of no bagging grape, and appearing as purple. The main anthocyanins were Mv3-O-Glu, Mv3-O- (6-O-p-Coum) -Glu and Pn3-O-Glu, which were the main coloration compositions of bagging grape, and appearing as purplish red. The fruits had excellent surface and brilliant colour after bagged.
