摘要
介绍了马铃薯全粉的分类、性能、特点和应用情况,分析了先进的马铃薯雪花全粉和颗粒全粉的工艺及设备开发、专利申请及与国际先进水平的差距,初步分析我国马铃薯加工业的现状及面临的问题与对策。
The classification, performance,characteristics and application of potato powder were introduced in this paper.The advanced processing technology and equipment for potato flakes and granules, applications of patent and the disparity with international advanced levels were analyzed.And the potato processing industry' s status, problems and solutions of our country were preliminarily analyzed.
