Capsaicin is an extremely spicy compound in chili peppers, which is of important application value in industry and agriculture because of its unique biological activity. This article provides an overview of the classification of capsaicin, physical and chemical properties of capsaicin, especially focusing on its applications in food, feed, and pharmaceutical industry.
