肉制品污染是影响肉质的重要因素,直接关系到人体健康。本文对肉制品中几种常见的检检测技术综述。包括:多聚酶链式反应PCR、酶联免疫反应、高效液相色谱法、近红外检测,旨在为我国开展肉制品的快速鉴定、检测以和中毒事件的甄别、处理、预防及病人的应急救治方面提供可靠的信息,确保人们的生命安全。
The impact of meat products contaminated meat is an important factor, directly related to human health. This article,,summarized several common detection technology in meat food. Including: polymerase chain reaction PCR, ELISA response, high-performance liquid chromatography, near-infrared detection, as China seeks to carry out the rapid identification of meat food, to detect and poisoning the screening, treatment, prevention and emergency medical treatment of patients to provide reliable information to ensure the safety of the lives of people.
