摘要
仙人掌果肉含有丰富的人体必需的蛋白质、矿物质、维生素、胡萝卜素等的成分。本试验以其主要原料,辅以蔗糖、稳定剂、香精等辅料,通过对稳定剂的选择试验,以及对饮料最佳配方进行正交试验,得出这种新型果肉乳饮料的原料配比为仙人掌果肉14%、蔗糖10%、柠檬酸3.2%、香精0.03%。
Abstract:Cactus fruit is rich in essential proteins, minerals, vitamins, carotenoids and other ingredients. In this study, the cactus pulp milk beverage using cactus pulp as main raw material and supplementing with sucrose, stabilizer, fragrance and other accessories were produced through stabilizer experiments and orthogonal experiment. The optimal formulation of beverages was 14% cactus fruit, 10% sugar, 3.2% citric acid and 0.03 % essence.
