犊牛肉是公犊牛(主要为奶牛公犊)在用全乳或者代乳料饲喂条件下,经少于20周龄的育肥而生产的高档牛肉。本文介绍了国内外犊牛肉生产的主要类型、生产模式,并主要就在犊牛肉生产中,犊牛生产性能以及存在的问题等方面作了综述。
Veal, from dairy-type calves,by less than 20 weeks of fattening and producting,is the high-grade beef on condition that calves are fed with milk or milk replacer. This article introduces main types and production patterns of veal production and mainly describes production performance and problems in the course of veal production.
