摘要
天然植物香料的研究已成为目前国内外研究的热点问题。主要介绍了天然植物香料的抗氧化性及其在肉制品中的应用。
The research on natural fragrance and flavour has been become the hot spot in spices industry now. The antioxidantion of natural fragrance and flavour and application in meat product were introduced in this paper.
