以花生仁为原料,通过正交优化试验设计筛选出发酵剂的添加量,发酵时间、发酵温度及各种添加剂用量,并制成营养丰富、风味独特,具有保健功效的发酵型花生奶。
The paper described the preparation of fermented peanut milk, by using peanut as materials. Through orthogonal test, fermented adding, fermented time, fermented temperature and additive consumption were selected. The fermented peanut milk is abundant of nutrition,and the flavor is unique with health care efficiency.
